I love love love this open-faced sandwich! You have to give it a try. The chutney's sweet and spicy taste goes so well with the creamy cheese and the earthy veggies.
veggie+cheese+chutney sandwich

veggie: • 1 tbs olive oil; • 1/2 tbs butter; • 1/2 bunch spring onions or leeks, thinly sliced; • 1/2 bunch spinach, leaves only
cheese: • goat cheese or 8 slices Brie or Camembert cheese
chutney: • raisin chutney or plum chutney or plum sauce
sandwich: 4 slices bread
1. Heat pan over medium heat. Add olive oil and butter, then onions/leeks. Cook over medium heat until caramelized. Once onions are done, put in a bowl and set aside.
2. Use same pan to sauté spinach over medium heat. Set aside.
3. Toast bread. Put bread on a baking sheet and top with cheese. Broil until gooey. Remove from broiler. 4. Put a thin layer of chutney on the cheesy bread slices.
5. Top with spinach and caramelized onions. Season with salt and pepper.
