Here I am again, after a long and wonderful summer.... And with the end of the summer vacation comes back to school. And with the back to school come the homemade baked goods to enjoy right after the bell rings. To start with: these "kolaches" filled with a homemade raspberry jam.
Kolaches (with raspberry jam)
Tassajara Bread Book, p.62
1. Same batter as the one for the cinnamon rolls
2. After the first rising, roll the dough out to a thickness of 1/4 inch, and cut into squares.
3. Place a spoonful of filling in the center of each square, then twist the opposite corners together over the filling.
4. Pinch the corners tightly together or they will come apart. Let them rise for 10 to 15 minutes.
5. Apply egg wash (1 egg+ 2 tbs cold water or milk)
6. Bake at 350F for 20 minutes, or until golden brown.
