Spinach Salad + Dried Cranberries + Pine Nuts


I discovered this salad about 3 years ago here. From then on, I have been making it regularly without getting tired of it. I love love love this salad!

Spinach Salad + Cranberries + Pine Nuts 
(adapted from a recipe by Lisa Keys, CT)

2 tb fresh orange juice
1 ts balsamic vinegar
1 ts Dijon mustard
3 tb extra-virgin olive oil
salt and pepper, to taste
6 oz package baby spinach, rinsed
2 tb dried cranberries
3 tb pine nuts, toasted

1. Make the dressing whisking together in a small bowl the orange juice, balsamic vinegar, Dijon mustard, extra-virgin olive oil, salt and pepper. Set aside.
2. Put the baby spinach in a large bowl.  
3. Wait until the last minute to pour dressing over, tossing lightly before serving.  
4. Sprinkle with dried cranberries and toasted pine nuts. 

Serves 4 to 6
