purple cabbage, persimmon, & pomegranate salad + a honey lemon dressing

Seasonal.


purple cabbage, persimmon, & pomegranate salad 
+ a honey lemon dressing
inspired by whole promise


1/2 a small purple cabbage, washed and thinly sliced
1 large persimmon, thinly sliced
seeds from 1/2 pomegranate
herbs, sprouts, seeds, nuts, and/or protein of your choice

1. Prepare the above ingredients and place into a large salad bowl
2. Serve with a drizzle of dressing below either alone or alongside your choice of herbs (coriander, parsley or basil are good choices here), sprouts (new at the mountain view farmers market!!!), seeds (sunflower, pumpkin, preferably soaked for 2 hours or so), nuts (almonds, walnuts, ...) , or other protein


Honey Lime Dressing

1/4 cup apple cider vinegar
1/4 cup cold pressed olive oil
1/4 cup raw honey
juice of one lemon
salt & pepper to season

1. Place all the ingredients into a bowl and whisk vigorously to combine
2. Season to taste
3. Store in a glass container with a lid for up to 3 days in the refrigerator
