A fall cake loaded with good stuff:
(pumpkin+apples+walnuts) + (eggs+sugar+soy milk+olive oil) + (flour+baking powder+cinnamon).

2 apples, diced
1 handful of walnuts, coarsely chopped
250g unbleached all-purpose flour
1 ts ground cinnamon
1 1/2 ts baking powder
80g cane sugar
15 cl soy milk
5 cl olive oil
0. Preheat oven to 360F
1. In a bowl, combine pumpkin puree + diced apples + chopped nuts.
2. In a large bowl, beat eggs + sugar + soy milk + olive oil.
3. In another bowl, combine flour + cinnamon + baking powder. Add to the second bowl. Then, add the first bowl.
4. Pour the batter into a greased cake pan and bake for 40-45 minutes
5. Cool on a wire rack.
