peaches with chocolate/amaretti filling

It has been a while.... Sorry. But here I am again. As usual after a summer vacation in Europe, I come up with a truly Italian recipe. So simple, delicious, and addicting. I can't stop making it. Peach season is almost over. So hurry up!


peaches with chocolate/amaretti filling

4 yellow ripe peaches
16 amaretti cookies (vincenzi for example) {+ 1 or 2 for the top}
1 egg yolk
1 tbs unsweetened cocoa powder
1/3 cup sweet wine (muscat) or a mix of water+sugar
1 tbs butter

1. preheat the oven to 360F
2. cut the peaches in half (without peeling them). take off the pit. using a melon baller or a teaspoon, take off a little bit if the center of each peach. set aside the surplus just removed.
3. in a small food processor, mix the amaretti + egg yolk + cacao + peaches from step 1 (only the inside)
4. stuff the peaches with this preparation and put them in the buttered baking dish.
5. dot each peach with the remaining butter and some coarsely chopped amaretti cookies 
6. pour the sweet wine or the sweetened water over the peaches
7. bake the peaches for about 20 minutes. 
8. serve at room temperature.
