A quick and easy recipe from "Delicious Living" (Whole Food's magazine, July 2011). A nice addition to your sandwiches, wraps, bagels....
carrot almond spread
1/3 cup whole almonds
2 large carrots (8oz, 250gr), peeled and cut into 1/2 inch rounds
1/4 ts salt
1 ts ground cumin
1 ts ground coriander
1/8 ts ground turmeric
1/8 ts ground cinnamon
1 clove garlic
1/2 cup packed fresh cilantro leaves
2 ts lemon juice
1. Preheat oven to 350F. Scatter almonds on a baking sheet. Toast for 15 minutes until fragrant. Cool completely.
2. Meanwhile, steam carrots 10-15 minutes until very tender. Cool completely.
3. Put almonds, carrots, salt, cumin, coriander, turmeric, cinnamon, garlic, and cilantro in a food processor. With motor running, add lemon juice. Continue to process until mixture is spreadable, scraping down sides as needed. (Pate' will be coarse, not completely smooth).
