Tofu Smoothie

Another easy and delightful way to use tofu. I'll give you the basic recipe. You can add any fruit you'd like to that base. Here, I've added 2 peaches (the first of the season!).

Tofu smoothie, from the Tassajara Recipe Book (p.29)

1 block tofu, preferably silken (about 7oz - 200gr)
2 oranges, juiced
1/8-1/4 ts salt
2 tbs maple syrup
2 tbs lemon juice
1 banana

Blend ingredients in a food processor or bender. Adjust seasoning. Thin with water to desired consistency.
Variations: Add other seasonal fruit, such as 12 cherries (pitted), 4-6 apricots, or 1/2 cup or more of blueberries, raspberries, or strawberries.
