mac&cheese?

Mac&Cheese? Yes? No? Maybe? Here is a revised version of the traditional US "Macaroni and Cheese". You will never guess what's inside! Neither will your kids. Even when they know, they'll still ask for it.

Mac & Cheese? (serves 2)

150 gr of your choice pasta
1/3 cup pumpkin puree*
1/3 cup grated Parmesan cheese (or a mix of Parmesan and cheddar cheese)
1tbs heavy cream
1 or 2 pinches of ground nutmeg
1 ts extra-virgin olive oil


1. Cook the pasta according to the package directions (or less since the pasta will be returned to heat)
2. In the meanwhile, mix together the other ingredients in a small food processor
3. When the pasta is cooked, drain in a colander
4. Return the pasta to the dish, add the pumpkin/cheese mixture, mix well, and cook over medium/medium high heat for another 2 minutes or so
5. NB: If you like your Mac&Cheese creamier, add some milk or cooking water

*pumpkin puree: steam your pumpkin or bake it (or butternut squash) in the oven at 375F for about 30-45 minutes depending on your pumpkin size. Let it cool down. Take off the skin. Mix the pumpkin's chair. Can be made ahead of time.
